The lean muscle and visible grain of flank steak absorb flavors deeply. Bold marinades, citrus, garlic, chimichurri, soy, or chili-based blends all pair beautifully with flank beef. We love it for steak fajitas, Korean bulgogi, grilled steak salads, carne asada tacos, beef stir-fry with vegetables, and London broil with roasted vegetables. Grill or sear over high heat for the best results, 4 to 5 minutes per side on a hot grill or in a cast-iron skillet. You can also broil for 4 to 5 minutes per side. Target medium-rare to medium (130–145°F) for optimal tenderness and juiciness. Because this is 100% grass-fed beef, it may cook faster than conventionally raised beef, so keep a close eye on it. Let the steak rest 5 to 10 minutes before slicing thin against the grain.
