Some meals are only as good as the ingredients behind them. Our grass-fed ground beef is made from a custom blend of brisket, short rib, and chuck, delivering bold, satisfying flavor in every pound. Most ground beef is made from a single cut or whatever trimmings are left over. We developed this recipe using three cuts, each chosen for what it brings to the grind: brisket for depth, short rib for richness, and chuck for body and structure. The result is a more complex, layered flavor, the kind you'd expect from a great steakhouse burger, made right in your own kitchen.
The numbers refer to the lean-to-fat ratio: 80% lean beef, 20% fat. Fat is what carries flavor and keeps the meat tender and moist as it cooks, so the ratio matters more than most people realize. Leaner grinds like 90/10 or 85/15 work well for certain dishes, though they cook faster and may need a little more attention to stay tender. For many recipes, like burgers, meatloaf, chili, and meat sauce, 80/20 is the sweet spot.
We raise cattle on pasture their entire lives, here on our farm in Roanoke, Indiana, and across the partner farms we carefully vet. We rotate them regularly across regenerative pastures, which keeps the animals healthy and gives the land time to recover and rebuild. Every pound is 100% grass-fed beef – no grain, ever.
The differences are real, and they show up on the plate. Pasture-raised ground beef has a deeper, more mineral-rich taste that reflects how the animals actually lived and ate. Grass-fed, grass-finished beef offers a more favorable nutrient profile than conventional grain-fed beef, including higher levels of omega-3 fatty acids and conjugated linoleic acid (CLA).
We love our 80/20 blend for burgers. The three-cut blend means the flavor stands on its own with just salt and pepper. Form your patties gently without overworking the meat, then cook them on a hot grill or in a cast-iron skillet for the best results.

Grass-fed ground beef may cook faster than conventional ground beef, so medium heat is your friend. For burgers, cook to an internal temperature of 160°F. Resist the urge to press down while cooking, as that pushes out the juices you want to keep. For a noticeable difference in juiciness, let the burgers rest for a minute or two before serving.
