Our Family's Custom Blend

Most ground beef is made from a single cut or whatever trimmings are left over. We developed this recipe using three cuts, each chosen for what it brings to the grind: brisket for depth, short rib for richness, and chuck for body and structure. The result is a more complex, layered flavor, the kind you'd expect from a great steakhouse burger, made right in your own kitchen.

What Is 80/20 Ground Beef?

The numbers refer to the lean-to-fat ratio: 80% lean beef, 20% fat. Fat is what carries flavor and keeps the meat tender and moist as it cooks, so the ratio matters more than most people realize. Leaner grinds like 90/10 or 85/15 work well for certain dishes, though they cook faster and may need a little more attention to stay tender. For many recipes, like burgers, meatloaf, chili, and meat sauce, 80/20 is the sweet spot.

Cooking Tips for Grass-Fed Ground Beef

Grass-fed ground beef comes from cattle raised on pasture and fed grass their entire lives on open pasture. Ours is also grass-finished, which means our cattle stay on pasture all the way through harvest.
The flavor difference is noticeable. Grass-fed, grass-finished beef tends to be more complex and robust, a direct result of a lifetime on pasture rather than a feedlot. It's also free from the hormones, antibiotics, and GMO feed used in conventional production.
