Render Your Own Tallow

Cut suet into small pieces, then cook slowly over low heat on the stovetop, in an oven at 225°F, or in a slow cooker. Add a little water to prevent scorching. After a few hours, strain the liquid fat through a fine-mesh strainer, discard solids, and let cool before storing in the refrigerator or freezer.

Suet is raw kidney fat with a crumbly texture. Tallow is rendered suet—the pure fat after heating. Use raw suet for grating into dough, and render it into tallow for frying or roasting.
